Mango cake

Dough:

  • 100g Wheat flour
  • 100g Oat flour
  • 25 Agave syrup
  • 30g coconut oil
  • Pinch of salt

Bake at 180°C until it gets a golden-brown colour.

Mango curd:

  • 1 mango (250g skin and bone free)
  • 200 ml water
  • 25g Agave syrup
  • 2 tsp stevia
  • 2 tbsp cornflour
  • 1 tsp Agar Agar (powder, not flakes)

Process all together. Cook it at medium intensity stirring constantly. Let it boil for 3 minutes or until it thickens. Place on the previously baked dough and let it cool in the fridge.

Base:

  • 100g harina de trigo
  • 100g harina de avena
  • 25 Sirope de agave
  • 30g aceite de coco
  • Pizca de sal

Hornear 180°C hasta que esté dorada.

Crema de Mango:

  • 1 mango (250g pelado y sin hueso)
  • 200 ml agua
  • 25g sirope de agave
  • 2 cucharaditas stevia
  • 2 cucharadas harina de maíz
  • 1 cucharadita Agar Agar (polvo, no copos)

Procesar todo junto y llevar a fuego medio sin dejar de remover hasta que hierva unos 3 minutos y empiece a espesar. Colocar encima de la base ya horneada y dejar enfriar en la nevera.
