- Prepare the sourdough starter. You’ll need:
50 ml warm water
10 g fresh Baker’s yeast
90 g all-purpose flour
Mix all the ingredients making a ball and leave the dough completely covered with warm water for 15 minutes or until the ball starts floating. - Mix the sourdough starter with the rest of ingredients:
410 g all-purpose flour
100 ml water
50 g vegan butter
75 g vegan sugar
1/2 tsp turmeric (just for the coloring)
1/2 tsp salt
2 tbsp flaxseed + 6 tbsp of water - Make the ensaimadas shape: Once you got the final dough, divide it in 10-12 little balls. To make the ensaimadas you’ll need 100 g of melted vegan butter. Stretch out every single ball in a rectangle shape and spread the melted butter on each rectangle surface. Then, roll it up on itself like doing a cannelloni. Stretch a bit the cannelloni and place it on the oven tray making a spiral shape (make sure there is space between each loop, because it will grow [a lot]). Leave your ensaimadas grow for 2-3 hours (or overnight) before baking them.
- Baking time! Bake at 180°C for 15-20 minutes or until they get a brown coloring. Spread some caster sugar on top while they’re still warm.

- Preparar la masa madre. Necesitarás:
50 ml agua tibia
10 g levadura de panadería
90 g harina de fuerza
Mezcla todos los ingredientes haciendo una bola y déjala cubierta de agua tibia durante 15 min o hasta que la bola empiece a flotar. - Mezcla la masa madre con el resto de ingredientes:
410 g harina de fuerza
100 ml agua
50 g margarina vegetal
75 g azúcar vegano
1/2 cucharadita de cúrcuma (sólo para darles color)
1/2 cucharadita de sal
2 cucharadas lino + 6 cucharadas de agua - Dar forma: Una vez tengas la masa final, dividela en 10-12 bolitas. Para hacer las ensaimadas necesitarás 100 g de margarina vegetal fundida. Estira cada bolita haciendo un rectángulo y untalos de margarina. Después, enrolla cada rectángulo haciendo un canelón. Estira un poco el canelón resultante y lo pones en la bandeja del horno haciendo una forma de espiral (asegúrate de dejar espacio entre los bucles para que crezca). Déjalas crecer durante 2-3 horas (o toda la noche) antes de hornearlas.
- ¡Al horno! Hornea a 180°C durante 15-20 minutos o hasta que cojan color. Échales azúcar glass por encima cuándo aún estén calientes
