Chickpea vegan cheese

We found this vegan cheese recipe in a YouTube channel. We loved the idea of a vegan cheese made of chickpeas, it was so interesting from a nutritional point of view! The texture of this cheese reminded us of tofu or fresh cheese. It has a lemony touch. We use to eat it as a side part in our salads but it can be seared in a pan with some species (we tried basil, thyme and hot pepper).

  • 1 cup of soaked chickpeas (left 8h in water)
  • 2 cups of water
  • 1 garlic clove
  • 1/4 medium onion
  • 1 tbsp nutricional yeast
  • 1 lemon juice
  • 1 tsp salt
  • 1 tbsp soft olive oil

Blend it all together. Cook it in a pot and keep stirring until it thickens. Finally we transfer it to a greased container and place it into the fridge to chill. It will be ready to eat in 2 hours, give or take.

Ésta receta de queso la encontramos en un canal de Youtube. Nos gustó porque partía de una base muy diferente a la mayoría de quesos veganos y a nivel nutricional és muy interesante! Tiene una textura que recuerda al queso fresco, yo lo como a taquitos en la ensalada, tiene un toque fresco de limón.

  • 1 taza de garbanzos remojados (activados en agua unas 8h)
  • 2 tazas de agua
  • 1 diente de ajo
  • 1/4 de cebolla
  • 1 cucharada de levadura nutricional
  • Jugo de 1 limón
  • 1 cucharadita de sal
  • 1 cucharada de aceite de oliva

Procesar todo junto. Calentar en un cazo a fuego medio sin dejar de remover, hasta que espese. Finalmente lo colocamos en un recipiente engrasado y lo llevamos a refrigerar. A las 2h está listo.
