Vegan protein cookies

We made cookies, a lot of cookies. It was an improvement. We were looking for a lemony and chocolate flavor, a healthy (they’re sugar-free and low-fat) and proteic cookie (every cookie contains 4g of protein give or take). They are sweet, crunchy on the outside and lovely ?

Ingredients (25 cookies):
150g ground oat flakes
50g oat flakes
150g integral wheat flour
2 tsp sodium bicarbonate
65g pea protein (2 scoops, from @myproteines)
2 tbsp chia + 6 tbsp water
1 lemon and 1 orange zest
1/2 lemon and 1 orange juice
30g olive oil
5 pitted dates
2 tsp stevia
35g chocolate chips

On a floured surface shape your cookies using a rolling pin and a mold (make sure their thickness is approximately 0’5 cm). Bake at 190°C for 20 min or until they get a brown color.

Hemos hecho galletas, muchas galletas. Fue una improvisación. Estábamos buscando una galleta con gusto cítrico y a chocolate, una galleta sana (no lleva azúcar y contiene muy poco aceite) y proteica (cada galleta contiene unos 4g de proteína). Estas galletas son dulces, crujientes por fuera y super buenas ?

Ingredientes (25 galletas):
150g copos de avena triturados
50g copos de avena
150g harina integral de trigo
65g proteina de guisante (2 cazos, de @myproteines)
2 cucharaditas bicarbonato sódico
2 cucharadas chia + 6 cucharadas agua
Ralladura de 1 limón y 1 naranja
Jugo de 1/2 limón y 1 naranja
30g aceite de oliva
5 dátiles deshuesados
2 cucharaditas stevia
35g gotas de chocolate

Sobre una superficie enharinada, dales forma a las galletas usando un rodillo y un molde (grosor aproximado de 0’5cm). Hornea a 190°C durante 20 minutos o hasta que cojan color.
